Russian Salad

Ingredients:

  • 1 cup pasta (boiled with salt in water)
  • 1 cup chick peas(white chole) (boiled with salt in water) 
  • 2 small boiled potatoes 
  • 2 spring onions
  • 1 tomato
  • 1 cucumber
  • 2 green chillies
  • 2 tbsp any salad dressing or mayonaise
  • 1 tbsp salt
  • 1 tbsp sugar
  • 1 lemon

    Preparation:

  • Cut potatoes, onions, tomatoes, cucumber into small pieces.
  • Mix them with boiled pasta.
  • Then mix rest of the things into it.
  • You can decorate it with split green chillies also.
  • Keep it in fridge for  half an hour.
  • Your Russian salad is ready to serve. 

Chicken Barbecue

Ingredients:

•1 cup white vinegar
•3 tablespoons sugar
•2 tablespoons salt
•1 cup water
•1/2 cup canola oil
•1 tablespoon poultry seasoning
•1 tablespoon pepper
•1 broiler/fryer chicken (3 to 3-1/2 pounds), cut up

Preparation:

•In a small bowl, whisk the vinegar, sugar and salt. Whisk in the water, oil, poultry seasoning and pepper. Reserve 1/2 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat. Refrigerate for 2-4 hours.

•Drain chicken and discard marinade. Grill, covered, over medium heat for 35-45 minutes or until juices run clear, turning and basting occasionally with reserved marinade. Yield: 4 servings.

Strawberry Trifle

Ingredients:
•1 cup cold milk
•1 cup (8 ounces) sour cream
•1 package (3.4 ounces) instant vanilla pudding mix
•1 teaspoon grated orange peel
•2 cups heavy whipping cream, whipped
•8 cups cubed angel food cake
•4 cups sliced fresh strawberries

Preparation:
In a large bowl, beat the milk, sour cream, pudding mix and orange peel on low speed until thickened. Fold in whipped cream.

•Place half of the cake cubes in a 3-qt. glass bowl. Arrange a third of the strawberries around sides of bowl and over cake; top with half of the pudding mixture. Repeat layers once. Top with remaining berries. Refrigerate for 2 hours before serving. Yield: 8-10 serving

Cheese Omelette

Ingredients:
  • 3 Eggs.
  • ½,cup Cheese.(grated)
  • 2 Onions (chopped)
  • 2 Green Chili (chopped)
  • 50 gm Capsicum.(chopped)
  • 50 gm Cabbage.(chopped)
  • 50 gm Mushroom.(chopped)
  • 2 Tomatoes(chopped)
  • Chopped Coriander leaves
  • ¼ cup Milk
  • Salt to taste  
  • Oil for frying
Preparation:
  • Heat oil in a pan.Break eggs in a bowl,add all the ingredients except cheese,mix it till fluffy.
  • When oil is heated,pour the egg in it.
  • Flip it when light brown,spread cheese wait till it melts.

Clarified Butter:

Clarified butter is milk fat rendered from butter to separate the milk solids and water from the butterfat.Typically, it is produced by melting butter and allowing the components to separate by density.
 For clarified butter, slowly melt unsalted butter over low heat.
Don't let the butter come to a boil, and don't stir it. This
allows the milk solids to separate from the liquid butter.
Once the butter has separated into three layers--foamy milk
solids on top, clarified butter in the middle, and milk solids on
the bottom--turn off the heat. Skim the foamy white solids from the
top. Then ladle off the clarified butter. Be careful not to disturb
the milk solids at the bottom of the pan.
Clarified butter can be used immediately. Or, let it solidify and
keep it in the refrigerator for up to three to four weeks.
Just remelt to use. One pound of unsalted butter yields 1-1/4 cups
clarified butter.

Tasty Treat Salad


 
 
 
 
Ingredients:



Onion 1 medium

Cucumber,peeled1 medium

Tomato1 medium

Capsicum,diced1 medium

Pita breads2

Green olives,pitted8

Black olives,pitted8

Iceberg lettuce leaves5-6

Parsley1/4 bunch

Fresh mint leaves,optionala few

Saltto taste

Black pepper powderto taste

Lemon juice2 tablespoons

Extra virgin olive oil 3 tablespoons
 

Preparation:
  • Toast pita breads in non stick pan till golden from both sides. Remove from heat and set aside.Roughly chop onion and separate into layers. Deseed cucumber and slice diagonally. Diagonally slice tomato.
  • Combine all vegetables in a bowl. Add capsicum, green and black olives, torn lettuce leaves.Cut toasted breads into bite size pieces and add.
  • Roughly chop parsley and add. Add mint leaves if using.Add salt, pepper powder, lemon juice and olive oil. Toss to mix. Serve immediately.

Spicy Paneer (Cottage Cheese)

Ingredients:


 
  • Cottage Cheese (Paneer) : 250 gms
  • Capsicum : 3
  • Onion : 4
  • Tomato : 4 
  • long piece Ginger : 1 "
  • Red Chili Powder : 1 tsp
  • Bay Leaf : 2
  • Cloves : 4
  • Cinnamon : 1 piece
  • Clarified Butter/ Oil : 4 tblsp

  • Preparation:
    • Cut cottage cheese, capsicum in long pieces.
    • Grind onion, tomato, ginger, salt, red chili powder.
    • Mince cloves and cinnamom.
    • Heat clarified butter in a pan.
    • Add bay leaf, cloves, cinnamon.
    • Then add onion, tomato, ginger paste.
    • Continue cooking it on medium flame till ghee/oil begins to separate.
    • Add paneer and capsicum pieces.
    • Cook on low flame.
    • When the capsicum are done put off the flame.
    • Take off the fire and serve hot.
